Plantain fried rice with pan-grilled barbecue jerk mushrooms recipe by Alethea Todaro

Plantain fried rice with pan-grilled BBQ jerk mushrooms by Alethea Todaro

Ingredients

For the plantain fried rice
  • 2 ripe plantains, diced 

  • Avocado oil 

  • 1 small white onion, diced 

  • 1 tsp garlic powder

  • 1 tsp onion powder 

  • 1 tsp cumin

  • 1 tsp oregano

  • 1 tsp thyme 

  • 1/2 tsp curry powder 

  • Salt and pepper to taste

  • 1 small green bell pepper, diced 

  • 1 small red bell pepper, diced 

  • 1 jalapeño, deseeded and diced 

  • 2 tsp minced garlic

  • 1 to 2 Tbsp green onions, chopped 

  • 2 Tbsp vegan butter 

  • 2 1/2 cups day-old cooked rice (jasmine or short grain) 

  • 1/3 cup soy sauce or coconut aminos 

  • 1/2 cup peas and carrots 

  • 1/2 cup corn 

For the pan-grilled barbecue jerk mushrooms
  • 1 to 2 cups grey oyster mushrooms

  • 1 tsp jerk marinade 

  • 1 Tbsp ketchup 

  • 1 to 2 Tbsp jerk seasoning 

  • 1 to 2 Tbsp barbecue sauce 

  • 1 Tbsp maple syrup 

  • Avocado oil 

  • 2 to 4 metal skewers 


Instructions

Plantain fried rice

Step 1
Add avocado oil to a large non-stick heated skillet or wok. Add the diced onions. Saute for 1 to 2 minutes or until slightly translucent. Add garlic powder, onion powder, cumin, oregano, thyme, curry powder, salt and pepper. Mix the ingredients together well. Saute for 1 minute. 

Step 2
Add the green bell peppers, red bell peppers, diced jalapeño, minced garlic, and green onions. Saute together for 1 to 2 minutes then move vegetables to one side of the pan. 

Step 3
Add more oil to the empty side of the pan, followed by the diced plantains. Saute plantains on all sides until golden. Gently combine all ingredients in the pan, then move them to one side of the pan.

Step 4
Add vegan butter to the empty side of your pan. (If your pan isn’t big enough, you can remove the vegetables from the pan first.) Add in the day-old rice and saute until reheated. Combine the rice with the sauteed vegetables. 

Step 5
Add in soy sauce, peas, carrots, and corn. Combine ingredients and cook together, stirring frequently on medium heat for 5 to 8 minutes. Taste and adjust seasonings to your preference. Remove from the heat. 

Pan-grilled barbecue jerk mushrooms

Step 1
Break the mushrooms into smaller pieces. Add the mushrooms to a large mixing bowl, followed by the jerk marinade, ketchup, jerk seasoning, barbecue sauce, and maple syrup. Mix the ingredients well, and be sure to fully coat the mushrooms. 

Step 2
Gently add the marinated mushrooms to the skewers. Place the mushroom skewers on a heated cast iron grill pan lightly coated with oil. Pan grill the mushrooms on all sides until slightly crispy. Brush with more of your sauce. 

Step 3
Remove from the pan. Garnish with green onions and enjoy with plantain fried rice.
